This quick and easy rum cocktail recipe can be made with no special equipment!
Sometimes it is hard to justify the prices of cocktails as bars. Especially when it is so easy and fast to make this one at home! Buying bottles of liquor can be pricy upfront, but it saves a lot of money in the long run.
Relax after a long, hot day with this cool and refreshing drink.
Using only one kind of alcohol and no special bar equipment you can make this impressive drink in even the most limited home bar.
How to make simple syrup:
Simple syrup is a cocktail essential that is usually 1 part sugar dissolved in 1 part water. You can heat water in a microwave or kettle before adding the sugar to help it dissolve, then be sure you cool the syrup before use. If you prefer your drinks less sweet you can use 1 part sugar with 2 parts water. Simple syrup has a relatively short life span, so I don't recommend keeping it in the fridge more than one or two days. You can also buy ready-made simple syrup, but it is expensive.
Money Saving Tip |
Mint is super easy to grow. As long as you keep it watered it is almost indestructible! Growing your own mint will lower the cost of this daiquiri recipe and many others. Be sure to grow mint in a container though, it is invasive! |
Using fresh limes is both cheaper and tastier than using the prepackaged lime juice. You can also take a slice for garnish out of the middle of the lime before juicing it. |

Gather your ingredients.

Peel and dice the kiwi and put it into a small bowl with 3 mint leaves, 1 1/2 oz white rum, and 1/2 oz lime juice.

Muddle well with a muddler or a fork until the kiwi is mashed thoroughly and the mint leaves are fully bruised.
If you have a cocktail shaker: Strain the kiwi juice mixture into the cocktail shaker. Use the muddler or fork to press all the liquid out, then set the pulp aside. Add the 3/4 oz simple syrup and ice to the shaker. Shake well, then pour it into a glass and garnish with a lime slice and a fresh mint leaf (if desired).
If you do not have a cocktail shaker: Strain the kiwi juice mixture into a glass. Use the muddler or fork to press all the liquid out, then set the pulp aside. Add the 3/4 oz simple syrup to the glass and stir. Add ice to the glass and stir again. Garnish with a lime slice and a fresh mint leaf (if desired).

Prost!
