This salad with strawberries is using spring mix, but could just as easily use fresh spinach.
My grandmother always loved to top her spinach salad with strawberries and almonds. It was a common side dish she served anytime we were enjoying her delicious cooking! There is something very nostalgic about putting strawberries on a salad, but now I find I prefer to contrast them with the colorful and textural variety in spring mix.
Here is an idea for an easy side dish that is very versatile!
This salad recipe is so fast that you can have it thrown together in fewer than 5 minutes if you already have balsamic vinaigrette, making it a great choice for any meal where you want to add a fresh vegetable. Try this side dish with barbeques, Sunday brunches, hosted dinners, Summer cookouts, or just dinner with the family. It is also naturally vegan friendly!
Side dish or full sized.
The recipe is written so that you can multiply to know exactly how much you need for how many side salads you want. But that doesn't mean it has to be relegated to only be a side! You can easily increase the volume of the ingredients for a single large one!
Gather your ingredients. Slice the strawberries.
Put the sliced strawberries on top of the spring mix.
Add the sliced or slivered almonds.
Drizzle the balsamic vinaigrette over the top.
Optionally you can sprinkle French fried onions or small croutons on top.
Serve and enjoy!
What can I serve this strawberry salad alongside?
If you can serve mashed potatoes with it then you can also serve this salad! It can go with almost any dish that is considered a standard American dinner, such as:
Lasagna
Sloppy Joes
Pot Roast
Stew
Pulled BBQ Sandwiches
Pizza
Etc.
Storage.
You can make the balsamic vinaigrette a day or two in advance. You can also put together the spring mix topped with the strawberries and almonds the day before, but be sure it's packaged in an airtight container. Do not add the dressing and the French fried onions or croutons until immediately before.
It also packs well for lunch as long as you have the dressing packed separately. You can omit the French fried onions or croutons for simplicity, or pack them with the lettuce, strawberries, and almonds and just know they will be a little soggy.
