Let's Begin:
Gather the ingredients.
Start by making the simple syrup: Put 1 cup sugar and 1 cup water in a small sauce pan over medium high heat and bring it to a simmer. Stir the mixture periodically until the sugar dissolves. Once the sugar is dissolved remove the pan from the heat. You can choose to heat it in the microwave instead if you prefer, just be sure the sugar is thoroughly dissolved before use.
Meanwhile, start juicing and straining the lemons. You can press on the pulp in your strainer with a spoon to get more juice out of it. You want 1 1/3 cup after straining.
Add the lemon juice and the 1/2 cup packed fresh mint leaves (about 30g) to a blender. Blend until smooth. Strain the lemon and mint mixture with a fine sieve into a large pitcher.
Add the simple syrup and the 4 cups cold water to the pitcher. If you want more sweetness you can make more syrup by combining equal amounts of sugar and water and heating until the sugar dissolves. Once you have reached the desired sweetness, top off the pitcher with ice and serve.
