Red Pepper Hummus Recipe

Making homemade hummus is one of the easiest and fastest appetizer recipes. With only a few ingredients and 10 minutes you can create this red pepper variation on regular hummus. Few snack ideas are as universally beloved as hummus, so treat yourself and your friends! Why make homemade hummus when you can easily buy it from the store?

Homemade hummus recipes taste much better than the ones at the store, and also don't have the added preservatives. Not to mention making hummus from scratch is cheaper per serving than buying it, and it is so simple and fast that it's no hassle to just blend it together!




Substitutions:

Substitution for tahini: You can use either cashew butter or sunflower butter.


Substitution for ice cubes: You can use 3 Tbs of water instead.


What kind of olive oil is best? I recommend extra virgin! But you can use whatever olive oil you have on hand.


Substitution for roasted red pepper: It you don't have roasted red peppers you can also just make regular hummus.



Let's Begin!

Gather all the ingredients and strain the chickpeas. The liquid from the chickpeas is called aquafaba and is a preferred egg replacement in a lot of vegan recipes, so you may consider keeping it to use in something else.

Add to the blender the chickpeas, the lemon juice, 1/3 cup tahini paste, 1 large clove of garlic, 4oz (115g) roasted red peppers, 2 Tbs olive oil, 2 ice cubes, and 1/2 tsp salt. Blend the ingredients in the blender for a few minutes until nearly completely smooth. Taste, and if needed add another 1/4 tsp salt, or to taste.

Pour it into a bowl, drizzle it with olive oil, and add a sprinkle of sumac, zaatar, chopped parsley, or smoked paprika. Serve with warm pitas or sliced veggies.

Storage.

This recipe is good stored in the fridge for a week. It also packs very nicely and would be a great addition for a work lunch or picnic. I do not recommend freezing it.
