Sometimes you just need a quick little something, so here is a vegetarian or vegan snack idea! All you need to make this quick recipe is a few simple ingredients, and you can choose to use vegan cream cheese and vegan ranch if preferred. If you want to add extra flavor and have some ranch seasoning mix on hand, you can sprinkle some of that over the top as well!
This quick snack can be made in less than 5 minutes!

Substitutions:
Substitute for ranch: You could use tzatziki sauce instead, if you like!
Substitute for cream cheese: You could use slices of mild flavored white cheese instead such as mozzarella or Monterey Jack.
Let's Begin:
Gather the ingredients.
Spread 1 Tbs of the cream cheese or vegan cream cheese on each of the rice cakes.
Place 3 thin slices of cucumber on each rice cake.
Slice the tomato and put an even number of slices on each of the rice cakes. Offset the tomatoes from the cucumbers to make it more attractive. Sprinkle salt over each rice cake.
Drizzle 1 Tbs of ranch or vegan ranch on each rice cake.
Top each rice cake with a crack of black pepper. Enjoy!
